Description
Vincent represents the ultimate expression of the native white grape variety “Spergola,” which is only found in the small area of Colli di Scandiano, with traces dating back to the 11th century.
Made from 100% Spergola grapes using the Champenoise method, it rests on the lees for at least 30 months before disgorgement.
With a straw yellow color and golden reflections, this sparkling white wine has a rich and intense aroma, with hints of yeast and a subtle floral note.
Its extended time on the lees ensures a fine and continuous perlage, complexity, and structure, balanced by a pleasant freshness.
On the palate, it is savory and persistent, with delicate notes of almond.
Pairings: Appetizers (erbazzone, cold cuts, polenta, gnocco, parmigiano), raw fish, pumpkin tortelli, baked fish, white meat dishes, vegetable flans, buffalo mozzarella.
