Our Testaroli are made using a blend of ancient grains, updated annually at our research centre. The resulting flour, mixed with water and salt, gives life to our organically transitioning Testaroli.

Cooking Instructions: Cut the Testarolo into diamond shapes, each side measuring 5 cm. Heat a pot of salted water and bring it to a boil, then turn off the heat. Immerse the Testaroli for a few minutes. Drain and dress with oil and cheese or with pesto.
