Parmigiano-Reggiano is an ancient and rich cheese known as the “King of cheeses.” It is made using the same ingredients and handcrafted process as eight centuries ago. The milk from Red Cows of Reggiana’s breed has unique qualities that result in a cheese with better aging capabilities and digestibility. This special Parmigiano-Reggiano requires at least 24 months of aging, compared to the traditional 12 months, resulting in a sweet, delicate taste and characteristic features such as straw yellow color and strong aroma even after 30 months of aging.
Sustainable Excellence: Red Cows Parmigiano-Reggiano Production
Red Cows Parmigiano-Reggiano adheres to additional specific production guidelines outlined in the “Regulation to produce Red Cows Parmigiano-Reggiano.” This regulation is authored by the Reggiana’s Breed Breeder’s National Association, the sole control organization authorized to certify the link between the breed and the cheese. The regulation stipulates the use of only grass, hay, and certified non-GMO feed. Any method to force production is strictly prohibited, and there is a high focus on animal well-being. Consequently, our stables house animals that easily surpass 10 years of age, a rarity in other types of cattle breeding.

For Children: Matured Parmigiano-Reggiano is a rich source of essential amino acids and animal fat, offering easily digestible proteins. It is allergy-friendly, free from contaminants like antibiotics and pesticides, and lacks lactose, making it suitable for children and those with intolerance.
For Older Individuals and Adolescents: With its high calcium content, Parmigiano-Reggiano is recommended for older individuals with osteoporosis and adolescents (ages 12 to 18) to support proper bone calcification and prevent future issues.
